バーテールフラットヘッド / マゴチ (Bartail Flathead)は、
オーストラリアでは北海岸の、QLD・NT・WAに生息。

ダスキーフラットヘッド (Dusky flathead)は、
オーストラリアでは東海岸のQLDに生息。

ノーザンサンドフラットヘッド (Northern Sand Flathead)は、
オーストラリアでは南海岸以外に生息。

サザンサンドフラットヘッド (Southern Sand Flathead)は、
オーストラリアでは南海岸の、WA・SA・VIC・NSWに生息。

フラットヘッドの美味しい食べ方

フラットヘッド / コチ(Flathead)の美味しい食べ方は、
色々とありますが、
ぜひ刺身で食べてもらいたい。

刺身/お造り

フラットヘッド / コチは、
身の処理が面倒くさいです。

鋭い棘、ぬめり、小さい鱗、独特な体型。
などなど面倒くさいことこの上ありません。

また、
解体していくと歩留まりが悪いことに気づきます。
もし食べ応えが無くなるのが嫌なら、
そのまま煮付けても良いでしょう。
火を通しても余り身が縮みません。

ですが、
是非一度、コチは刺身で食べて欲しい。

白身できめ細やかな肉質。
甘みと肉質のバランスがよく、
安物の河豚より美味しいかもしれません。

もし、
新鮮でない場合は、
さっと湯引きしてポン酢で食べるのもアリです。

煮付け

実が減るのが嫌なら、
頭と内臓を抜いて、鱗と棘を落としたら、
煮付けにしましょう。

皮がしっかりしてて、
熱で身も縮みにくいので、
煮物にするのもOKです。

味付けはシンプルに、
醤油、砂糖、酒。

酒はあった方が良いけど、
無くても….
いや～、ウーリーの安物でもあった方がいいかな。

もし臭みが気になるようなら、
輪切りor細かく刻んだ生姜を入れましょう。
味と香りがしまります。

コチの唐揚げ

熱を入れても硬くならず、
フワフワなので、
揚げ物も選択肢としてアリです。

骨も、
鯛みたいに気にはなりませんし。
※棘・ヒレは取り除きましょう。

コーンスターチ・小麦粉をまぶして、
油で揚げるだけ。

下味は塩胡椒程度に抑えましょう。
ニンニク・醤油・生姜で味をつけてしまうと、
コチの良さが吹っ飛びます。
